How to make Pelmen

 



today I'm gonna share with you one of my favorite recipes it's beef dumplings in Russian they're called  Pelmen and this dish reminds me of home every single time I make it or it eats it um I grew up in them and they're absolutely my favorite and it's such a comfort food for me so I hope you enjoyed this recipe and don't forget I upload two new videos every week and I've got a bunch of other dumpling recipes coming with different fillings so there's something for everybody you're going to need beef salt pepper garlic onions olive oil plain flour water milk egg bay leaf and peppercorns in your stand mixer add your flour in a separate bowl add your water with milk egg and then a little bit of oil and mix everything together we're going to gradually mix everything together with the flour so slowly add your wet mixture to the dry and knead it for good five minutes knead the dough on floured surface for another four to five minutes until it becomes nice and elastic so then we're going to cover it with cling film and leave it to rest for at least thirty minutes in the fridge to make the filling add your onions and garlic into your food processor along with some water and blitz everything together until you get nice and puree in a bowl add your beef add your salt and pepper then add your onion and garlic mixture then mix everything together until it's well combined then take your dough pinch a little bit at a time because it does dry out and we're going to roll out a large circle make sure your dough is constantly floured because it is very sticky so add more flour around and on top and on your rolling pin once you rolled out the dough we're going to cut same circles all around and place one teaspoon of your minced filling in the middle next part is quite easy you need to take the dough pinched it from all the sides and make sure the filling stays in the middle and then just roll it up and there you go that's how you make a dumpling please prepare dumplings onto the floured pan until it's ready to cook another way to make the panini is to use the dumpling mold we're going to add flour on top make sure it's well floured so they don't stick to it we're gonna add our dough on top and then we're going to add the filling inside until all of it is filled up lastly place another sheet on top add more flour and then we're going to use our rolling pin and firmly press inside and roll it up and down then take off the excess dough we're going to reuse that for later and they will easily pop out when you shake them in the pot add your vegetable stock and then followed by bay leaves and peppercorns and when the water reaches boiling point we're going to add our dumplings in the middle and cook it for about five to eight minutes until they start to float when they're floating that means they ready add butter if you want to and mix everything together you
